I am writing a cookbook but’s not a cookbook that I ever hope to get published. It the Stanton family cookbook.
My mother had a notebook that contained her favorite recipes and in that notebook were some recipes that she had learned from her mother, my grandmother, and every her grandmother, my great grandmother.
Tonight I cooked a dish that is on the shortlist to get added to the cookbook.
I love food from eastern Europe especially Hungarian dishes with lots of paprika but tonight I ventured further east into Ukrainian cuisine and cooked something called vareniki.
Vareniki are a kind of stuffed dumpling that are filled with potato.

I found my Vareniki recipe at a cooking blog that’s run by a Ukrainian girl so I think they are probably authentic.
The recipe is simple. It’s a basic dough stuffed with mashed potato and served with sour cream and onion. Very tasty but I’m interested to try out next time the fruity versions. I think I’ll try the cherry stuffed vareniki next time I see cherries in the supermarket and if they live up to how I imagine they’ll be going in the Stanton family cookbook.
Who knows maybe one day my daughter or granddaughter will make them too!
